German Apple Pancakes

German Apple Pancakes 3  

THINGS YOU’LL NEED 
6 tablespoons of butter
7 tablespoons granulated sugar 
2 granny smith apples (about 1 pound) 
1/4 cup brown sugar 
1 tablespoon freshly squeezed lemon juice 
1/2 teaspoon ground cinnamon 
2/3 cup all-purpose flour 
1/2 teaspoon salt 
3 large eggs 
3/4 cup confectioners' sugar

THE HOW-TO PART

 (1) Preheat oven to 450 degrees.

(2) Butter muffin cups of tin and sprinkle with
about 2 table spoons of granulated sugar.

 (3) Peel, core, and slice apples into 1/2 inch pieces
and in a medium bowl, toss apples with brown sugar,
lemon juice and cinnamon.

(4) Melt 2 tablespoons of butter in a nonstick skillet over medium heat.
Add apple mixture and saute, turning occasionally until caramelized,
10 to 12 minutes. Remove pan from stove and let cool 5 minutes.
Divide caramelized apples among prepared muffin cups and set aside.

 (5) In the bowl combine flour, salt, 5 tablespoons granulated sugar
and mix well. Then add 2 tablespoons melted and slightly cooled butter,
 eggs and milk. Mix well until it's all blended and not too lumpy.

(6) Pour batter over apples. Transfer tin to oven and reduce heat
to 400 degrees. Bake until pancakes puff up, about 15 minutes.

(7) Remove tin from oven and pop out of molds by inverting the
tin onto a flat work surface. Dust with confectioners' sugar,
 serve immediately and enjoy!

The title of the video is 'Dinner at Five Leaves in Greenpoint Brooklyn shot with super 8 film' and is directed by Art of JustLikeaCat. Short is from a crime film the director is working on entitled Too Hot to Kill and the song playing is 'If I'm good' by Alexander 'Skip' Spence. The entire thing only lasts 53 seconds and I swear, I just can’t stop watching it.



Did you see what they're eating? Apparently it’s something called Devils on Horseback. Dates wrapped in bacon, considered a 'starter' and served with dijon mustard. Are you familiar? If I lived anywhere near Brooklyn I would so go and try them now, but since I don't the next best thing has to be this recipe shared by Martha…



THINGS YOU’LL NEED
24 large dates, pitted
12 slices bacon, halved crosswise
1/3 cup crumbled Stilton cheese

DIRECTIONS
(1) Preheat oven to 400 degrees. Place 24 toothpicks in a small bowl filled with water; let soak 15 minutes. (2) Line a baking sheet with parchment paper and fit with a wire rack; set aside. (3) Halve dates lengthwise being careful not to cut all the way through. And place a small amount of cheese in the center of each date. (4) Wrap a piece of bacon around each date. Secure bacon with a toothpick. (5) Place dates on prepared baking sheet. Bake until bacon is cooked through, 20 to 25 minutes.

On the subject of loves...

These are all courtesy of one of my sister’s favorite places to have lunch. It was the best break I’ve had all week (thank you Anna!)





Also, I’m working on a mixed cd for my friend Louie and am having such a hard time making it. Haven’t made a mix in years. The video (below) is track number three (so far)… such happiness. Whenever I make a tape I remember one of my favorite quotes from the film High Fidelity: Now, the making of a good compilation tape is a very subtle art. Many do's and don'ts. First of all you're using someone else's poetry to express how you feel. This is a delicate thing. (Very true don’t you think? )

Sweets, music and friends in Berlin

From my favorite confectionery store, Fugetsu-Do, located in the Downtown area of Los Angeles (They've switched to Fall colors):



Also, did I tell you that I went to see 'Whip it!' last weekend? It very much falls under the 'chic-flick' category but I recommend it highly! Drew Barrymore is adorable and so is Ellen Page, but the scene stealers for me were Zoe Bell and Juliette Lewis. I'm a huge fan of strong female role models. The film also has a great soundtrack. Jens Lekman to the Ramones... and this one here that I'd never heard before (beautiful!):



Lastly, if you happen to be in Berlin from the 10th of October through the 6th of December be sure to visit my dear friend Maggie... actually it's the work of the amazing Ofer Wolberger at the C|O Berlin. Details available *HERE*.

Few months ago I saw the yummiest recipe in Bust magazine for
Blackberry-Lavender Popsicles. I have tons of Lavender in my garden and
having never used it to cook with before I set out to give it a go:

The Bust recipe is available *HERE* and is shared by Lindsay Laricks of the famous Fresher than Fresh Snow Cones in Kansas City... but after trying the Lavender-Blackberry recipe (even though the pops were a hit with my sister Anna) I realized that they really weren’t for me. The lavender was a little too strong for my taste, even though the recipe only calls for 2 tablespoons of it. Most likely I'm just not used to it, but I loved the formula of fruit and flowers and that Lindsay gave away such an great idea to experiment with.



Using her recipe I decided to make my own version substituting Blackberries with White Nectarines and the Lavender with Mint. I was extremely happy with the way it turned out, including the color:

THINGS YOU’LL NEED
3 White Nectarines Chopped (not pealed)
1 Cup of Mint
1 Cup of Sugar
1 ½ Cups of Water
6 Tbsp. Fresh Lemon Juice
Popsicle Molds (ice cube trays,
disposable cups, or skinny highball
glasses can be used instead)

Wooden Popsicle sticks (plastic spoons,
swizzle sticks or chopsticks will also work)
.

DIRECTIONS
(1) Put nectarines, sugar, water and mint in a saucepan. Bring ingredients to a boil. Reduce heat, cover and simmer for 8 minutes. (2) Mash ingredients with a potato masher (or fork) to extract most juice possible from nectarines. (3) Let cool about ½ hour in the refrigerator. (4) Remove from fridge and add lemon juice. Mix well. (5) Using a fine mesh strainer or sieve strain mixture into a large measuring cup (or something with a pour spout). (6) Pour mixture into Popsicle molds. (7) Cover with foil, then poke Popsicle sticks through to secure in place. (8) Freeze for approximately 4 hours. (9) Pop out of molds and enjoy!
